Courgette balls

Packed with protein and have less then 10 ingredients needing only 20 minutes to make This lovely vegan / gluten free courgette balls is by the wonderful @makingthymeforhealth. Original recipe is on her blog and here is my version.

Ingredients for the “meatballs”
1 can chickpeas, drained
3 garlic cloves
1/2 cup rolled oats
1 tsp dried basil
1 tsp dried oregano
1/2 tsp salt
2 tsp nutritional yeast (I didn’t have it at the time but will add it next time)
juice of 1/2 lemon
1 cup shredded courgette .

Ingredients for the sauce
1/2 shredded courgette
1 onion
2 garlic cloves
1 can chopped tomatoes

Serving with spaghetti (gluten free) .

Method for the courgette balls .


In the bowl of a food processor (or blender), combine the chickpeas, garlic cloves, and rolled oats. Pulse for about 5-10 seconds, until finely chopped. When you press the mixture between your fingers, it should hold together. Transfer to a large bowl along with the dried herbs, salt, nutritional yeast, lemon juice and shredded zucchini. Do not use more than 1 cup of shredded zucchini. Stir together until well-combined. If the mixture is too wet to handle, add a little flour (you can grind extra oats into a flour) or nutritional yeast to help absorb excess moisture.

Preheat the oven to 190 ÂșC. I used baking paper (not ideal for zero waste) to line a baking rack. Scoop out with your hand a heaping tablespoon of the mixture and roll into 12 separate balls. Arrange on the baking sheet a few inches apart then bake in the oven for 25 minutes. Meanwhile, cook pasta (as directed) and the sauce.


Sauce
I say, be brave and boost up the sauce as you would want it. I used a left over courgette to make it tick and flavoursome.
Heat a drizzle of oil in a small saucepan and add the onion. Cook for 5 mins and add the garlic. Cook for a minute and add the courgette. Another 10 mins cooking before pouring in the chopped tomatoes and the herbs / salt and pepper. Simmer it for 10-15 minutes
Once the courgette balls are light golden brown, remove from the oven. Served with the pasta and sauce
